SAD/SEXY was a menu inspired by the Colombian Pacific rainforest and other Latin American cultures. Its name captures the feeling of deeply satisfying comfort food and the thrill that comes with certain flavors and textures. A crunchy chicharrón, a very spicy sauce, a runny egg yolk. These are life to me. Simple pleasures that drive me crazy.
It is a mood. A sensory exploration rooted in memory, tracing back to my time at the academy where I was taught by one of Colombia’s most renowned traditional chefs, Maura de Caldas.
